Resumo: In times of economic downturn such as that experienced by Brazil in recent years, sectors that can grow despite the adverse environment should be analyzed more carefully by new entrepreneurs. One of these sectors that stands out is food, which according to ABIA is one of the most expressive in the national economy and one of the few that has shown growth in recent years. Still on this segment, according to FIESP in a survey on consumer preference in the food sector, 34% of those surveyed considered "convenience and practicality as a determinant factor for food consumption and 21% considered Health and Well-being as important factors. Given the wishes of these two groups of consumers, freeze-dried foods are a practical food option without the addition of preservatives, which is characterized as more practical and healthy. Knowing this, the present work proposed to analyze the viability of a freeze-dried food industry in Campinas, raising the possible consumer market, the fixed and variable costs for the insertion of the business in the market and the time of return of the investments, besides the development of a strategic plan for the maintenance of the business in the consumer market.
