Resumo: The cultivation of wheat, high economic importance to the world stage, being one of the most produced and consumed cereal. In the light of a growing demand for grain, increases the demand for superior quality. Cultural practices employed has great influence on the results obtained by the culture, and may obtain results differentiated according to employee management. The yield of grain flour quality ally, maximize the profits obtained by the producer, and the efficiency of use of the resources available for culture. The sedimentation test with sodium dodecyl sulfate (SDS), and the Kjhedal method, provide fast, an estimate of the quality of the flour. This study aims to evaluate whether there is influence of the spatial arrangement of plants and N dose for two commercial cultivars Amethyst and 150 CD. Four seeding densities were used, two spaces between the grooves of sowing, and two doses of N, forming a triple factorial (4x2x2). The test was conducted in random blocks with three replications. Each experimental unit was composed of 4.62 m ². The harvest was done mechanically and grain yield (RG) fixed to 13% humidity and converted to the unit kg ha-1. The results underscore the PMET for RG character got sowing density higher than those recommended by breeders ', and that the use of high doses of N increases the amount of sedimented by SDS and the percentage of protein by Kjhidal test, for the cultivars evaluated.
