Resumo: All occupations are exposed to risks that can cause accidents of different severities. The activities performed within an industrial kitchen require intensity and effort of the operators and according to researches quoted in this study, there is a certain lack of knowledge and low study on the risks and causes of accidents within this environment. Thus, this case study presents a strategy for the pursuit of excellence in productive processes, focusing on the concept of zero loss. It demonstrates that accident is a loss, an unnecessary cost that does not add value to the final product, besides impacting on morale of employees and the image of the company. Therefore, it is clear the need to adopt a method that demonstrates in a practical way the root causes of the problem, and for that is necessary a sustainable action plan to eradicate accidents. The methodology used in this case study was the 12 steps Kaizen, which aims the search for continuous improvement, raising performance levels in the short term. For this purpose, the analyzes are made by quality tools, and having as main result the elimination of accidents with burns in an industrial kitchen, from three to zero, with this number kept until today. So, it is recommended to use this methodology for the reduction and elimination of occupational accidents.
