The study was conducted with high school students at a private school in the city of Rondon, Paraná. For this, two questionnaires were applied, where 66 students were interviewed. First, an exhibition-dialogue-based lecture was given in order to introduce the topic plant pigments and demonstrate their main classes. Later, a questionnaire was passed. Then a practical activity on the subject was held. For the extraction of plant pigments, samples beet, cabbage and carrots were used. After alcoholic extraction of these materials, chromatography technique on paper was made for the separation of these compounds, and then evaluated through the second questionnaire, student learning. The results were satisfactory, it was observed that the practice methodology assisted students in obtaining further compression on the subject. Therefore, the trial may be a viable alternative to chemical education, and is a good strategy for science education. O objetivo do trabalho foi utilizar a experimentação a partir do tema pigmentos vegetais, com o intuito de avaliar a melhora no aprendizado dos alunos. O trabalho foi desenvolvido com alunos do Ensino Médio em um colégio particular do município de Marechal Cândido Rondon, Paraná. Para isso, foram aplicados dois questionários, onde 66 alunos foram entrevistados. Primeiramente, uma aula expositiva-dialogada foi ministrada, afim de introduzir o tema pigmentos vegetais e demonstrar suas principais classes. Posteriormente, um questionário foi repassado. Em seguida, uma atividade prática sobre o assunto foi realizada. Para a extração de pigmentos vegetais, amostras de beterraba, couve e cenoura foram utilizadas. Após a extração alcoólica destes materiais, a técnica de cromatografia em papel foi realizada para a separação destes compostos, sendo então avaliado, através do segundo questionário, o aprendizado dos alunos. Os resultados apresentados foram satisfatórios, pois foi observado que a metodologia prática utilizada auxiliou os alunos na obtenção de uma compressão mais aprofundada sobre o tema.
