This study aims to analyze the manufacturing process of slaughtering chickens in a large company from lean thinking, which is the basis of the Toyota system as well and production to identify the factors that affect productivity and increase production costs. To meet this goal elaborated a case study addressing the issue operational efficiency as a possible cause of the surveyed problems, using qualitative analysis tools such as value stream analysis, indicators of productivity and cost analysis driven by process. To perform the analysis were obtained data and information through documents and records of the studied process and then presented through graphs and tables. Results from this analysis show that the process in question has many factors that affect productivity, among them we can highlight issues related to management operations imbalance between production steps, unnecessary use of resources that do not add value to the product and lack of process control. |
