Resumo: Brazil is the largest world coffee producer and exporter, it occupies the second position among the consuming countries, being the coffee the most consumed beverage after water. Minas Gerais is the production leader, corresponding to 54.9% of the national total. In the Minas Gerais state, there is the predominance of Arabic grains, which has a high quality, striking aroma and sweet taste. The present work will show the development of the project of the Mello industrial unit, a self-sustainable roasted and ground coffee producing industry, in energy terms, because the residues from its activity will be redirected to biogas generation. Mello, whose name is a tribute to Sergeant Francisco de Mello Palheta, who brought the coffee to Brazil, will produce three classes of coffee: the traditional, extra-strong and gourmet, thus serving a wide target audience. Its location is in São Lourenço, a town in Minas Gerais state, famous for the Coffee Route, one of the most awarded regions of special coffee contests. Mello industrial unit is expected to produce 20,000 kg per day. The investment required to implement the unit is R$ 21,053,516.34. Lastly, the coffee company will have annual gross revenue of R$ 143,746,608.14.
