Resumo: One of the challenges that companies have is to have adequate management, in order to offer quality products and services, with a good operating strategy that allows the company to compete and take advantage of the opportunities that its market offers. Having methods and tools that help to stand out in this competitive market can provide consumers with greater prominence, thus attracting a larger consumer audience. Through the use of mathematical modeling techniques and efficient computational algorithms, operational research can help in the analysis of the most varied aspects and situations of a complex problem, allowing effective decisionmaking and the construction of more productive systems. The flexibility of applications and multidisciplinary interaction operational research is recognized as an area with vast opportunities for careers and jobs. Thus, it is important to show how the use of operational research in the production system of a brewing industry can make it more competitive in the market. In this context, this work analyzed the application of programming in the production of the liquid manufacturing process in a brewery as a way to provide a better direction of the products in the production line, since there is a variety of products, with process times, production and net margin.Demonstrating by the application of operational research the nonutilization of the total production capacity of the beer process of this brewery. It can thus be seen that the simulation of the operational research application brought a return of R$16,124,817.10 for 2022 and of R$96,394,673.89 in 2021 that can be used at the beginning of the Liquid Production Planning and Control plan to be passed the areas to be followed for application in the operational, reaching the initial objective of the present work.
