Resumo: The strawberry (Fragaria x ananassa Duch) has been gaining ground every year in the market, knowledge of the characteristics of each cultivar is of paramount importance for good production. The objective was to evaluate the production and quality of the fruits of different strawberry cultivars, in the substrate cultivation, adaptation, the climatic conditions of the Southwest region of Paraná, as well as to evaluate the effect of the shading screens on fruit quality. The experiment was implemented from January 2017 to March 2018, at the Federal Technological University of Paraná, Câmpus Two neighbors, in a protected environment of the "arc type", located at UNEP Horticulture. The experiment was arranged in a randomized complete block design, where factor 1: cultivars -Albion, Monterey and San Andreas, factor 2: shading screens -in red, silver and without screen (control). The beginning of the harvest occurred on August 21, 2017, 59 days after transplanting and 21 days after full flowering. The beginning of the harvest was marked when 50% of the plants had mature fruits. The fruit harvest point was determined when 75% of the fruit had the red epidermis. The fruits were submitted to physico-chemical analyzes for determination of total phenolic compounds, totaltitratable acidity and soluble solids content. The analyzes were divided into three phases, at 70 days, 131 days and 161 days after transplanting the seedlings. The results obtained in this research, indicate that the cultivars San Andreas and Monterey presented the best results in comparison to the Albion cultivar in relation to the total production and number of fruits. The Monterey cultivar resulted in sweeter fruits, with higher total soluble solids content and lower titratable total acidity value, also showed the best results for anthocyanins. The control, without reflective screen, resulted in sweeter fruits. The silver screen provided higher content of anthocyanins. The red screen resulted in higher yield per plant and higher total fruit yield. Research such as this is of extreme necessity, since it helps in the decision-making of the producer and the entities involved with the strawberry crop. Therefore, the results found in this research can directly help those already in the activity, both those who wish to initiate, expanding consumption and commercialization of strawberries in the city and in the region, due to their various benefits for human health.
