Resumo: Currently, Lean Manufacturing is a production system widely used in companies. In order to analyze the impact of the adoption of Lean tools on the environmental indicators of a food industry, the evolution of the values of waste indicators of a company in this branch was analyzed. For a complete analysis, it was investigated how production was before Lean practices were adopted, which Lean tools were used by the company and how this implementation process was. The waste indicators used by the company were also evaluated, which were used for the comparative analysis throughout the implementation period until the current one. In the period from 2013 to 2017, which includes the insertion of Lean tools, there was a 37% reduction in the volume of total waste generated at the plant and an 8% reduction in the waste generation indicator in relation to the plant's production volume. However, from 2018, the year in which the implementation of Lean was completed and a new factory was added to the plant, there was an increase in indicators so that between 2013 and 2021, the end of the analyzed period, there was a 39% increase in the volume of waste generation and 67% of waste generation in relation to production. Thus, it was concluded that there was an improvement in the indicators using Lean practices to a certain extent, but that another factor proved to be more significant from 2018 onwards, causing an increase in waste generation.
