Resumo: The industrial refrigeration has been widely used by the food industry in the productive process that involves liquid removal, like freeze-dry (lyophilization) that is dehydration of food with the objective to preserve properties and conserve the food through water removal by sublimation. The lyophilization process is widely employed on soluble coffee industry, where the main objective is produce an instant coffee, quick and practical and that preserves completely you taste and aroma. The present work aimed a study of optimization and practice analysis of industrial layout of refrigeration by a vapor system compression in cascade employed in the Cia Iguaçu de Café Solúvel company, through a comparison the coefficient of performance (COP), of the system in the question, with COP an conventional system idealized and an posterior exergy analysis, searching identify the points of destruction capability to achievement work system. In this way, were identified the points capable to be optimized and was verified that freezer installation in the question is lagged in relation to a conventional system, however, in conformity with the company specifications.
