The study is classified as descritive with the treatment quantitative quality of the researched data.It has been made a diagnosis of the production process, starting with focus on the weight variations and followed by the blend preparation process between the flours that the product is made of. Then, it has verified some limitations to determine the ideal raw material to produce this kind of cookie, and that the used flour blends don't present the ideal characteristics. Lab tests have been made and significant differences were identified between the distinct portions of flour. By the end of the work a set of actions is proposed to improve the results of the product. Este trabalho teve como objetivo investigar o processo de produção de uma empresa do ramo alimentício na região Oeste do Estado do Paraná, para preposição de ações de melhoria. Por meio deste estudo identificou-se o processo de produção do biscoito Cream Cracker e, com o auxílio de ferramentas da qualidade levantou-se as possíveis causas da variação do peso deste produto. O estudo é classificado como descritivo com tratamento quali-quantitativo dos dados pesquisados. Foi realizado um diagnóstico do processo produtivo, inicialmente com foco nas variações de peso e em seguida nos processos de preparação das misturas entre farinhas que constituem o produto. Verificou-se, então, algumas limitações para determinar a matéria prima ideal para a produção desse tipo de biscoito, e que as misturas (blend) de farinhas utilizadas acabam por não possuir as características ideais. Foram realizados testes em laboratório e identificadas diferenças substanciais entre as distintas proporções das farinhas.
