Resumo: Currently, the versatility of food products available to consumers is debated, which can generate doubts and even cause compromising of health from reactions such as food allergy and intolerance to certain foods. The aim of this study was to evaluate the conformity of the labeling of several processed meat products of different trademark in the towns of Cascavel, Medianeira and Foz do Iguaçu in Paraná, against ANVISA's RDC Nº 26/2015. Emulsified meat products (mortadella and sausage), fresh Tuscan sausage, nuggets and matured products (sausages and salami) of different trademark with possible food allergens were selected for a total of 28 products. Non - probabilistic sample survey was carried out with on-site application of the check list to evaluate the conformities and nonconformities in packages of meat products. It was observed that only the nuggets presented 100% regularity, whereas for mortadella, sausage, Tuscan sausage, salami and sausages matured, 71.4%, 50%, 20%, 80% and 33.3% were of accordance with the law. The food allergens found were soy protein and milk protein. Adequate labeling of many meat products is needed to improve customer communication and ensure consumer safety.
