Soy is a leguminous, original from China, currently being cultivated in many parts of the world. Its main derivative products include lecithin, bran and soy oil, the last one being the main product for human consumption. The main purpose of this paperwork is to measure the physicochemical properties of refined soy oil marketed in the city of Ponta Grossa, in Paraná. For this it was used a total of 10 samples from different brands, all acquired in the local big markets. The AOCS methodology was followed for the making of the analyses, such as Free Fatty Acids (FFA), Soap Concentration, Colour, Chlorophyll and Moisture Karl Fischer Reagent. It was verified that if taken as base the regulation of Agriculture, Livestock and Supplies Ministry (MAPA), all samples are accurate, being type 1 or type 2 – just sample n. 6 is not accurate to neither types. Considering the standards established by Health Surveillance National Agency (ANVISA), all samples are accurate as established. |
