According to the World Health Organization (WHO), it is estimated that one in every 10 people in the world falls ill and 420,000 die after eating food contaminated by microorganisms or chemicals substances. In Brazil in 2018, there were 503 outbreaks of Foodborne Diseases and the total number of patients was 6,803, with 9 fatalities, which are related to foodborne diseases. Today for the commercialization of artisanal cheeses, there is a specific law, which cites in art.10-A (Law n. 13,680, of June 14, 2018): “Interstate marketing of artisanal food products is permitted, with own traditional or regional characteristics and methods, using good agricultural and manufacturing practices, as long as they are subject to inspection by public health agencies in the States and the Federal District. Given this context, this work aimed to evaluate the quality standard of artisanal cheeses sold in two popular fairs in Ponta Grossa - PR. In the analyzed samples (2231, 2232 and 2233), only sample 2232 did not meet the criteria established by RDC n.12, of January 2, 2001 for presenting a positive result for Listeria monocytogenes in 25g. The other samples did not reveal any health problems and therefore were in compliance with the legislation. Regarding the results of the physical and chemical analyses, no analysis presented results that could evidence a possible contamination. From these results, it was concluded that the need for detection, prevention and management of risks to food health is an opportunity for improvement with artisanal cheese producers in the region of Ponta Grossa - PR. |
