The present work had the objective of determining the antioxidant activity of skin, pulp and seed of Fortuna avocado, veryfing its conservation state and extraction methods employed. The antioxidant activity analysis were carried out through the DPPH and ABTS methods on the freezedried and raw extract samples, obtained under magnetic stirring for four hours in ethanol. The agitation procedure was also studied (magnetic and ultrasonic), using 60 minutes process time. After the period of one year, it was observed a decrease of the antioxidant activity of samples, which were kept away from light in a freezer. It was also observed that the freezedrying process affected negatively the antioxidant activity of the sample, but increased the extraction yield. Simultaneously, by comparing the extraction methodology, therefore determining the most efficient conditions, it was observed that the ultrasound was more efficient than the magnetic stirring only for DPPH on the seed sample. For the other samples and methodologies (ABTS and yield) there were not significant differences. Hence, the influence of the drying process over the antioxidant activity and extraction yield of the Fortuna avocado skin, pulp and seed samples was investigated. |
