Resumo: Chocolate is one of the most consumed foods, moving a large part of the world economy, in its historical records, its consumption began in the Mayan, Aztec, and Olmec civilizations, being considered the food of the gods. One of the reasons why it is so appreciated is in the positive emotions and sensations of pleasure it brings. It is with this purpose that Aruanã special chocolate arises, with the concept of implementing an industry that not only serves the traditional public, but also the public with allergies to cow's milk protein (APLV) and vegans, aiming at quality and flavor, in order to deliver to the consumer a product equivalent to those designated as first line or even gourmet. The industry is located in Limeira, in the interior of the state of São Paulo, where it proved to have great potential for being close to highways that facilitate the logistics of receiving raw materials and distribution of finished products. The production is medium-sized, producing about 10,000 kg/month, going through the processes of mixing all ingredients (cocoa liquor, cocoa mass, sugar, cocoa butter, emulsifiers, and rice extract), refining, conching, tempering, molding, cooling, unmolding and packaging. The work, also, has a financial analysis with the objective of verifying the economic viability for the foundation of the industry, contains the material and energy balances, used for the sizing and choice of equipment and treatment of the effluents generated. The initial investment for the implementation of the industry was R$ 8,915,310.83, where the purchase of equipment for the process and for the office, the land and construction work, raw materials and employees salaries were considered. With the projection made, the company will pay off the loan in the seventh year with a production capacity of 80%, after which it will significantly increase its revenue and it will be necessary to work with 36% of its production capacity to avoid losses.
