Resumo: Considering the growing industrial development of products derived from cassava, which is a root, planted in various Brazilian regions, that belongs to the eating habits of the majority of the country’s population, this essay consists in the creation – from the feedstock’s choice, to the study of industrial unities in Paraná state – of a large sweet and sour cassava starch manufacturer: Manihot Polvilhos. Factors that include cassava plantation, the possibility of extracting its starch and its resulting application on starch production are recurring themes throughout the text, as well as the principles that justify the entrepreneurship’s existence, its organizational structure, public and location. Campo Mourão is the city chosen to establish a 170.636,75 m² lot where 41.135,69 m² of Manihot will be built, since it is a place that combines the cassava plantation core with a scientific and educational structure, allowing the progress of new plant cultivation and food industry technologies. The production process, that occurs in 3 daily shifts with 90 working contributors, has the optimization and innovation ideals as to starch quality, compared to those already sold by other companies, and inflexible analysis of concerning legislations. The production’s final stage, waste treatment, is even more valuable, since it’s based on sustainability and energy reuse principles, which shows the environment appreciation by Manihot’s staff as a whole. The thesis also contains a material and energy balance that assure a daily cassava processing of 400 tons, which results in 97,9 tons of sweet starch and 10,9 tons of sour starch, that will be sold in 0,5, 1, 25, 650 and 1400 kg packages, aiming for customers such as markets, bakeries and other industries. Each industrial equipment is also specified and budgeted, as well as the company’s production process and settlement costs, expecting an economic feasibility analysis that starts from a total investment of 9.761.179,26 dollars, with an expectation of amortization in 15 years and return of the amount invested in 7. It is also stated that the company is profitable through calculations of IRR (internal rate of return) and MIRR (modified internal rate of return), with values above the minimum acceptable rate of return (MARR), positive NPV (net present value) and EUAW (equivalent uniform annual worth). The monography is concluded with a process flow diagram that specifies the entire production line.
