Resumo: The organic consumer has growing gradually around the last few years, making this market each day more consolidated and attractive to companies, farmers and consumers, evidencing the necessity and economic viability. The analizes of consumer caracterizationbecames indispensable to the conpreention of the market performace actuation areas, and the target market. Geting the knology about the consumers preferences is possible to otimizate the rural production according to the products with bigger sales potential and aceptance the consumers. The main objective of this work is the caracterization of organic vegetables consumer in Dois Vizinhos e Pato Branco cities specificaly, as well as, identify the variable who have influence in the consume, understand the motivations, also the understanding of this consumers preferences. This methodology, consists in data collection by questionnaires applied to 50 consumers in organic products points of sale in this both cities, in the year of 2017. By the result a similar profile of consumer was identified in both of cities, compost by women predominantly, practicing Catholicism, with incomes ranging from 3.1 a 6 minimum salaries, from 31 to 60 years old, with good formation, being a public or private employee. Within the market chain of the sector, Pato Branco shows bigger maturity thanDois Vizinhos. The main motivations cames by the search for a healthy diet, the consumers of better qualities products, as well the concerns of the environment causes. It was also reported, on the part of the respondents, a lack of disclosure and incentive to the sector.
