Resumo: The foods and packaging and the labeling represents the first contact of the consumer with the product may interfere materially in the purchase decision of the consumer. Nutrition labeling to inform faithfully and clearly, the nutritional product content, assuring consumers the assurance that the product chosen is really about what the labeling features. However, researchers and consumers have observed several irregularities in nutrition labeling of foods. In this work we carried out a study on the nutritional labeling of three types of products light unsalted margarine and traditional and mayonnaise traditional and light; and light nectar and traditional fruit. For the assessment of nutritional labeling were employed general and specific standards for each product type, which were evaluated nine pre-set items, for such rules. At the end of the study, some irregularities were observed in the evaluated items normative; the largest percentage of non-conformities found on labels of light products. Such irregularities may lead to the consumption of the consumer product to sodium / salt diets. Thus it can be suggested that to ensure consumers are assured of a safe and suitable food to your diet, the food industry as well as regulators, need to focus more on the development of appropriate labels and broker, as well as monitoring thereof.
