Several studies regarding biodegradable active packaging have been performed with the main objective to preserve the sensory and nutritional properties of food without damaging the environment. The objective of this work was to produce starch and poly (lactic acid) (PLA) biodegradable sheets coated with silver nanoparticles (AgNP) and evaluate their application in the sliced ham conservation during refrigerated storage. Physicochemical analysis of pH, lipid oxidation, weight loss and color, and microbiological analyzes of psychrotrofic, mesophilic, coliforms microorganisms were performed to assess whether the AgNP was effective as antimicrobial agent on sliced ham. Packages containing AgNP significantly reduced psychrotrophic and mesophilic count until the 6th day of storage. However, lipid oxidation occurred in greater proportion in hams packaged in packages containing AgNP due to the catalytic effect of silver. In general, it can be concluded that starch and PLA sheets acted as an effective support for AgNP incorporation and is an alternative for packaging sliced ham. |
