The cane syrup is made from the juice of sugarcane, it is considered a nutritional product due to its content of sugars, minerals and vitamins. However, there are few published studies regarding the evaluation of physicochemical quality of cane syrup samples produced and marketed in Brazil. This study aimed to evaluate the physicochemical quality of 14 cane syrup samples produced and marketed in different regions of Brazil (South and Southeast). In the physicochemical analysis were determined the acidity, electrical conductivity, ash, pH, °Brix, reducing sugars, humidity and water activity. Statistical analysis of the results obtained in this work included average, standard deviation and principal component analysis (PCA). Were obtained some variations in the physicochemical quality determined for cane syrups samples, which can be assigned to different variables such as composition of the soil, variety and maturity of sugarcane, handling, storage and manufacturing process of each product. By PCA analysis it was possible to see the differences and similarities between the samples used in the study. The performed analyzes showed a compliance of the values found in this study with the literature and the current Brazilian regulation. It may be said, then, that the products are of good quality and fit for human consumption. |
