Resumo: The honey is a product consumed in all word because of his pleasant taste beside his good properties for the human health. It’s extreme variable product, since his physicochemical features has a considerable variation in function of weather, vegetation, specie and bee habits. Even it’s a variable product, actually in Brasil There is just one national legislation that parametrize this. This work has the objective of evaluate possible differences between the two species honey, Apis mellifera africanized and Tetragonisca angustula besides to check which analyzed variables (pH, total acidy, moisture, color, total phenols, total flavonoids and antioxidant activity) are responsible for diferentiation. It was found significant differences for the variables, between the two groups of beans, demonstrating that the specie have influence above the physicochemical features.
