Resumo: With the current market scenario, quality has become a strategy of the companies, which always seeks improvement and leadership in competitiveness. Thus, there is a need to look for tools that allows, the establishment of quality in the industries, enabling greater profits and safety in a short period. It can be said, that the Self-Control Program is currently the best tool for process control in the industry, as it ensures food safety and aims at quality. The program offers, a competitive strategy in the market, and adapts the company to national and international legislation. Based on Circular Letter n°. 175/2005 / CGPE / DIPOA the Ministry of Agriculture Livestock and Supply (MAPA), 14 elements of inspection, were developed, which contains the self-control program of an Edible Ice cream Industry. It was possible to analyze the company's nonconformities, to propose corrective measures, making the industry able to control its production in a safe way.
