Resumo: The population increase is directly reflected in consumption patterns of the world population, this way industrialization also experienced significant advances in recent decades. In some of these processes, as well as refrigerators and slaughterhouses, there is the generation of wastewater due to the considerable volumes of water used in the process of beneficiation of raw material. This paper presents the process of slaughtering cattle in a slaughterhouse in the state of Mato Grosso do Sul, pointing out the features of each stage of the slaughter process, and evaluating the effluents generated during the procedures performed at the abattoir, with a focus on environmental . For the evaluation of effluent treatment system were evaluated the following physico-chemical parameters, Biochemical Oxygen Demand, Chemical Oxygen Demand, Total Phosphate, Oils and Greases, Dissolved Oxygen, pH and Settling Solids. The treatment system presented varied concentrations of the analyzed parameters in the effluent gross, changes that were observed with respect to the removal efficiency of BOD, for example, varied between 42 and 95.55%. These variations are highlighted primarily in the months of December 2010 and in September 2011 and 2012, as being the most critical months on this parameter, and it has at certain times lower removal efficiencies of COD, ranging between 40.98 and 91.09% removal. For oils and greases the system was effective, presenting only in the month of September 2012 disagreement with respect to legislation. Regarding the overall treatment system requires adjustments to its structure to be efficient and effective in meeting the discharge standards in relation to the values recommended in CONAMA nº 357/2005 and nº 430/2011.
