Resumo: National agribusiness has faced the need of technological and organizational innovation that go far beyond programs focused on food security. The management of these industries has required a planned, directed and controlled to the quality that is delivered to the market in view of the economic, social and environmental sustainability conduct. Thus, this research aimed to identify the procedures that the case study realized in order to prevent and monitor the quality of their products in the manufacturing process. And, from the theoretical study on quality management, developing a comparative chart that showed the consistencies and differences in business practices observed in relation to theories explicit. For this study a qualitative methodological approach of descriptive type conducted from a case study of a food industry located in Rolandia was used. Data were collected through semi-structured interviews and systematic observation. Systematic observation was conducted over five days in the productive sector of the company under study, since the semi-structured interviews were geared toward a group of persons performing strategic role in the process for such a study, featuring a non-probability sample or trial. Data analysis was performed by means of content analysis technique that allowed to clearly explain the data collected and analyze them. It was concluded that both prevention procedures as the monitoring performed by the company under study must be reviewed and promptly created a plan in order to intensify them, so that all employees are well informed and aligned to the quality policy company, is a basic and fundamental condition for employees to take a synergistic approach towards quality policies envisioned internally. Within the framework of comparative theory in relation to practice pointing the congruencies and divergences, it was found that the company makes use of the checklist or Check Sheet and CAP programs; GMP and SSOP. Thus, several other quality tools have been suggested to contribute to the best collection of strategic data and, consequently, increase in managerial performance that excels in quality of manufactured products, from the standardization of processes and continuous improvement.
