Brazil presents itself as one of the world’s largest producers of tropical fruits. Accompanied with the consumption and processing of these fruits, there is the generation of agroindustrial waste that contributes to the increase of organic waste production and causes serious environmental problems. In this context, the objective of the present work was to evaluate the reuse of the pineapple crown, one of the fruit processing residues, as a potential natural source of bioactive compounds with antioxidant properties, obtained by different extraction methods. The extracts were obtained by the methods of maceration and ultrasonic assisted maceration, both using ethanol as extraction solvent, in concentrations of 99.5% and 70% for both extraction methods. The antioxidant potential of the extracts was evaluated by the dpph and abts methods. The results indicated that the ultrasound did not significantly interfere in the antioxidant potential of the extracts, as opposed to the extraction solvent, for which the hydroalcoholic solvent presented results significantly higher than those obtained with pure ethanol. For the mac-u method with 70% ethanol, the ec50 value for the pineapple peel extract was 4.18 mg.ml-1 for the dpph method and, teac was 20,516 0,124 mol.g-1. It is concluded that pineapple peel is a source of natural compounds with antioxidant capacity, and that its extract can be considered as a possible alternative to the use of synthetic antioxidants. Its use also results in the valuation of a waste, minimizes the generation of waste, and thus corroborates with sustainability |
