Resumo: The monograph presents the characteristics that involve the brewing world, from the current market, the brief history of beer, the beer production line detailed in each stage and the production tools of the project. The objective of the research is the association of two aspects: mass balance as a basis for data and process variables and the tools of production management: Resource and Inventory Management, MRP (Material Requirement Planning), PMP ), ERP (Enterprise Resources Planning) and process efficiency. The research has a deductive character and data search which is expected to use the union of the tools to optimize points of improvement in beer production. The data analyzed demonstrate that the steps studied in the brewing process of a regional brewery are optimizing points in contrast to those of a microbrewery and are feasible for the optimization of the brewing process. It was concluded that the optimization points of the batch management algorithm, total reuse of the by-product of the filtration and the fermentation are advantageous for the production process of the microbrewery.
