Resumo: In times of economic variation, political crises and market dissatisfaction, it is of great importance that companies seek constant improvements, serving customers with quality in the service provided. In this context, this work aimed to analyze through discrete simulation techniques (DES) the process of attending of a bakery located in the western region of Paraná. A dynamic, discrete and stochastic type model was implemented in the Cloudes simulation software. Simulation results demonstrated a large number of customers queuing at peak times.
