Resumo: This research presents the development of the extraction of grape anthocyanins Brazil, which make up the largest group of water soluble dyes in the plant kinfsom, the color of these dyes depends on the acidity found in the plant cell vacuole. Performs a test to determine the presence of anthocyanins extracted. With the help of the spectrophotometer is mensured the concentracion of anthocyanins as being approximately 102 mg/100 g of fresh grape. At the end of the process are studied in HPLC chromatographic analysis and it is assumed that the extracted anthocyanins have a retention time greater than 30 minutes, and that this result can be glycosylated. In addition to the studies cited the grape is characterized Brazil in relacion to moisture cintent, ash content, pH and acidity.
