We live in a globalized world, which over the years has demanded more and more industries for the introduction of fast food products, sausage products come into this niche, and as they are of great consumption need high quality, so the goal of this The objective of this work was to evaluate the physical characteristics of sausages sold in the city of Ponta Grossa. Four types of sausages available in the city markets were evaluated, the methodologies used were analysis of aW, color and texture, as well as regulation of packaging provided by the industries. The results obtained were satisfactory, since the samples obtained little variation among themselves, presenting standardization in the production, as well as demonstrating guaranteed quality. |
