Resumo: Corn (Zea mays L.) is currently the most widely produced cereal in the world, as it is one of the most important sources of energy in human and animal food in most countries. The great demand of Brazilian production is directed to the domestic market, where the state of Paraná is responsible for 47.3% of the national milling capacity. Thus, maize production chain has a great social and economic importance for the state, so it is essential to keep a constant evaluation of the maize production chain by evaluating the possible improvement points, both in quantitative and qualitative terms. The objective of this work was to carry out a case study of the maize production chain in the state of Paraná and the nutritional quality of maize, identifying the possible improvements that can be made in the production flow from the product transport to obtaining products with better nutritional value.
