Pullulan is an exopolysaccharide that has a commercial interest for being water soluble and biodegradable, and for being utilized in cosmetical industry, food industry, packaging industry and others because of its environmental value. The fungus Aureobasidium pullulans, utilized in this study, is the most utilized microorganism for producing pullulans. This study shows the optimized values of the fermentative parameters of two strains of this fungus and utilizes it to make another experiment using the optimized parameters with initial pH 4,32 , sucrose 117 g/L and ammonium sulfate 0,62 g/L, with daily monitoring of the responses of Brix degree, pH, biomass, pullulan concentration and viscosity. It may help in future studies predicting the time necessary for a desirable value and It can be used to determine the pullulan concentration in the medium without using reagents to extract pullulan and after that expending energy drying. |
