Motivated by the growth of the beer market, which has been undergoing a significant expansion process in Brazil, this work aimed to analyze physical-chemical parameters of samples of craft beers, Pilsen style, produced in breweries in the southwest region of the state of Paraná. All methodologies applied followed national and international analysis parameters, such as the methods established by the Instituto Adolfo Lutz (IAL), the American Society of Brewing Chemists (ASBC), and the Analytical European Brewerz Convention (EBC). These are analyzes with a degree of reliability and established as standards for quality control in breweries. Analyzes performed included pH, alcohol content, density, color, bitterness, real extract, primitive extract, Total Polyphenols and Proteins. In view of the results, it was observed that craft beers have a wide range of characteristics among themselves, the samples presented results within those expected by the legislation, such as pH values, primitive extract and real extract, but only one fit the parameters required for the definition of a lager style beer. |
