Resumo: Nowadays the fish represents one of the biggest sources of protein for the human diet. According to ONU projections and the increase in this activity, and in the world population, whose estimates predict that it will reach 8.5 billion inhabitants in 2030, fishing becomes one of the alternatives to provide part of the population's food, in addition to income generation and subsistence. On the shores of Lake Itaipu, there are several fishing colonies that use fishing as a source of income. Therefore, the aim of this work was to carry out a survey on fishing techniques, slaughter, fish consumption and socioeconomic profile of fishermen in the municipality of Santa Helena - PR on the shores of Lake Itaipu. Data collection was carried out through the application of a questionnaire with fishermen from the Nossa Senhora do Navegantes Fishermen's Colony in the municipality of Santa Helena - PR, contemplating the fishing techniques, volume and type of fish obtained, consumption by fishermen and the application of Good Manufacturing Practices during the slaughter of fish. Nineteen items were analyzed, interviewed in all 20 fishermen, men and women, who live on the shores of Lake Itaipu, in small properties or fishing spots. It was observed difficulty on the part of fishermen to carry out processes of good manufacturing practices, due to customs acquired over the years, which added to the difficulties they find in marketing the fish, presents itself as the main difficulties pointed out by them. In order to improve income, the infrastructure is still adequate for the practice of the activity and does not demonstrate the need for large investments to improve production. Investment in logistics for the sale of more elaborate products would represent a more promising opportunity for fishermen, as it would add value to the product of their work and to their monthly income.
