There are two kinds of brown sugar, the granulated or beaten kind, and brown sugar, crystallized kind. The brown sugar is usually produced by small industries or familiar companies. It must also be exempt of land materials, of parasites and of animal or vegetal detracts. In the microscopic preparations it must show absence of dirtiness, of parasites and of insect larvas or its fragments. The microscopy in the food is the micro analytical technic that can be used to control the quality to identify the components of a product; it was found that the products are according to the specifications. Considering the importance of the food quality, this task had the aim of verify the hygienic sanitary conditions of the brown sugar commercialized in the market. The levels of contamination by foreign matter and dirt in 27 brown sugar samples were evaluated. In the microscopic analyzes, 55.56% of the samples were with foreign matter and dirt. |
