Resumo: About 80% of the passion fruit mass is considered waste in fruit juice production. Due to its high content of fibers and minerals, the peel, when is not discarded or used as fertilizer or animal feed, can serve as raw material for the pectin industry or other functional ingredients. Based on the need of the knowledge of the wastes properties that may be reused, this work aimed to study the thermophysical properties of passuion fruit peel and and the influence of humidity on them. The specific heat was determined by mixing calorimeter method and fit was found an value average of 2.75 J.g-1.ºC-1. Density was determined through the relationship between mass and volume occupied and the value was approximately of 900 kg.m-3. Thermal diffusivity was obtained through the capacity of heat diffusion through a cylinder combined with a thermocouple set. The value of thermal diffusivity of passion fruit peel was 1.19 m².s-1 it was verified that the property increased with the increasing of moisture. Thermal conductivity was determined from the experimental results obtained from density, thermal diffusivity and specific heat and was found an average value of 0.3 W/m.ºC.
