Resumo: The cassava (Manihot esculenta Crantz) plays an important role in Brazilians food diet, because of its high energy content. Brazil configures as one of the biggest growers of this cultivation e also it’s biggest consumer, presenting in 1999 a consumption of roots per capita of 94,58lb/hab/year (FAO, 2003). The search for and improvement of the quality of the raw material makes the utilization of management tools and quality technologies increase, both in the field and in processing, in expectation of meeting safety requirements in respect to the consumer and productivity. The present work reassessed and implemented quality control standards in the production of one cassava flour industry, located in the District of São Lourenço, Cianote, Paraná, aiming to maximize the product quality.
