Resumo: This study aimed to carry out an assessment of the sanitary conditions of food companies in the city of Francisco Beltrão - PR. For this evaluation, a checklist was used based on the RDC No. 275/2002, applied to 16 companies of the branches of restaurants, snack bars, butcher and bakery. The conditions of the facilities were evaluated, vector control and urban pests, water supply, management of waste and sewage, the layout, the conditions of hygiene of equipment and utensils, hygiene and training of handlers, storage conditions of raw materials, ingredients and packaging, production flow, labeling, storage and transportation, the presence of the Good Practice Guide and the records of their achievement. Performing a combination of cases of Foodborne Diseases occurred between February 28 to April 24 and the sanitary conditions of the companies evaluated in the same period. The results showed that the following items evaluated were more nonconformities: vector control; layout; hygiene and training of handlers; labeling, storage and transportation of products; production flow beyond the Manual of Good Manufacturing Practices and the records of the implementation of Standard Operating Procedures of the evaluated companies. For this reason, these items require greater attention by those responsible of these companies, so there is an improvement in the quality of products produced, in addition to being a form of control of foodborne illness. Thereby increasing the food safety produced, improving the company's image on the consumer and consolidating its brand.
