Soybean (Glycine max) is a legume which over the years has become a major crop for the socioeconomic development of the country, its production is expanding. The conventional soybeans has been widely implicated as a cancer-preventing agent, however, the characteristics of the genetically modified soybean vary with the gene introduced, raising questions about the effects of its use. With the intention to highlight the differences between soybeans, conventional (B4) and transgenic cultivar COODETED 206 (A1, B5 and C3) grow COODETED 206 RR analyzes were performed physicochemical water activity (Aw), moisture, acidity , gray and color (L * a * b *) and instrumental analyzes were also performed as spectroscopy Fourier transform infrared (FTIR) spectroscopy and near infrared (NIR), whose results were correlated with the physicochemical data. The average values of physico-chemical analysis and the averages of the FTIR and NIR spectra were used for principal component analysis (PCA) and partial least squares regression (PLS) using the Pirouette program, version 4.00 (Infometrix). Showing that the FTIR and NIR combined with chemometrics is an effective tool for qualitative and quantitative characterization of the soybeans. |
