Resumo: The production and characterization of pinyon pines starch films with antimicrobial activity is the purpose of present paper. The films were made according to casting technique and factorial planning 23, using as matrix the pinion starch (Araucaria angustifolia), glycerol and rosemary essential oil in all treatments. The films were characterized according to antimicrobial activity, thickness, density, weight, luminosity, chroma b*, adsorption isotherm, WVPR and WVP. The pinion starch films impregnated with rosemary essential oil showed antimicrobial effect over Salmonella sp. and Bacillus cereus. Films with higher concentration of starch showed increase in thickness, density and weight. The highest content of glycerol and rosemary essential oil increased luminosity and chroma b* of films. The higher absorption of humidity was verified in films with high glycerol concentration. All films showed high WVPR and WVP, influenced by starch concentration and rosemary essential oil. The pinhao starch films impregnated with rosemary essential oil showed production potential with antimicrobial activity, however it were highly hydrophilic, hindering the application as food package.
