Resumo: This paper addresses the security, pollution and food handling, since man lives in constant change, and always seeks new and is also always in constant transformation. Thus, justified the choice of this theme, by its relevance since the first basic need for the survival of man is food that should be safe and of good quality. Therefore, it is necessary to know the procedures, rules that must be followed to avoid that faces a demobilization and a loss of meaning in the universe in question. The methodology is characteristic of literature, which consists in the search for books, magazines, internet and other means to address the issue. Thus, our results are the correct ways of handling and storing food so that they discard the possibility of contamination, causing serious health risks.
