Resumo: The present study aims to demonstrate the influence of environmental conditions of soybean planting on the protein content of the grain. This parameter of the quality suffers interference of the climate, temperature, humidity and soil type where the cultivation takes place, thus there are significant differences between the results of the different regions of Brazil, for such quality specification. Nowadays, raw materials have been received by the milling industry, with lower values of protein content, which has a direct impact on the production of one of its main products, soybean meal. This makes it difficult to comply with the specifications established by the legislation for the sale of the product, and consequently the satisfaction of the customer, which is a fundamental element established by TQM. Aiming to evaluate such interference, from the different regions on soy protein, comparative tests were carried out through the results of analyzes of protein content of the raw material processed in the last four years in two soybean mill industry units, located in the states of Paraná and Mato Grosso, as well as the statistical evaluation of the data through the tool of time series, which demonstrates the decrease of protein content in the grain over the years. By constructing a history of results by regions, it is possible to map the quality of the grain in each locality, thus establishing raw material purchasing criteria, as well as delimitation of process controls for soybean meal production, obtaining final quality of conforming protein values.
