Resumo: This study aimed to analyze the consumption profile of fermented dairy products in Francisco Beltrão -PR. For this, a questionnaire was developed which was applied to consumers of these foods, in supermarkets in the city, in order to identify the behavior and profile of the consumer of fermented dairy products. The aspects studied were: age group, sex, education, income, frequency of consumption, time of consumption, preferred flavors, attributes observed during the purchase, reasons for consumption, most consumed fermented dairy products, contribution of the sugar present in the diet and the sensations aroused when consuming this type of product. The results obtained when applying the questionnaires were that the population of Francisco Beltrão has little habit of consuming fermented dairy products, reported that they know the difference between the products and that they havea preference for consuming firm or Greek yogurt, strawberry flavor, as an afternoon snack and that when they consume they feel good. Furthermore, that price, flavor and consistency are the main attributes observed at the time of purchase and the main reason for consuming fermented dairy products is because they are tasty.
