The quality of food products is one of the most relevant points in all segments of an industry, and Hazard Analysis and Critical Control Points is a tool that addresses food safety through hazard analysis and control. This work aimed to creat a manual for the implementation of the Hazard Analysis and Critical Control Points (HACCP) system in order to guarantee the reliability of the food produced. For this, a qualitative methodological approach was used, of the descriptive type, carried out from a case study, based on the bibliographic research where the collected data were secondary. In this work it was possible to develop a proposal for the implementation of a effective HACCP system, a categorized list was made so that it could facilitate the study and organization at the time of proposal development, in such a way that the frozen food industry studied was interested in executing the implantation proposal and thus guaranteeing an even safer and more reliable production. |
