Resumo: The growth of food limitations such as lactose intolerance and adherence to a lifestyle based on the reduction or elimination of animal foods has accelerated the spread of plant-based products.Vegetable dairy products have a high level of consumer approval, for this reason, there is a proposal to create a line of vegan and lactose-free products, consisting of a fermented beverage, which has the same concept as fermented milk, with coconut's and strawberry's flavors, the cream and the aqueous extract. Due to the existence of demand for the products and availability of raw material in Brazil, Milco proposes to make products based on coconut, using Lactobacillus reuteri as inoculum for the fermented beverage. The company will be mediumsized, with a production capacity of 3 thousand liters per day of fermented, 2800 liters of aqueous extract, 675.88 kg of coconut cream and 299,69 kg of coconut fiber. The company will be located in the city of Sorocaba (SP), strategic point to reach the target audience of the metropolitan regions of São Paulo (SP), Rio de Janeiro (RJ) and Curitiba (PR). Product development relies on several processes such as receiving raw materials, washing, grinding, mixing, filtering, skimming, pasteurizing, homogenizing, fermentation, quality testing, flavoring, filling and storage. The company aims to offer quality vegan products and influence change in the future of the planet. The financial analysis aims to verify the economic viability for the foundation of the financial industry and treatment in consideration of energy balances, the choice of equipment and treatment of waste generated. The initial investment for the implementation of the industry will be R$ 12,221,913.50, which included the acquisition of equipment for the process and for the office, land and construction, raw materials and employees' salaries. With the projection made, the company will pay off the loan in the tenth year with a production capacity of 85%.
