Resumo: Consumer demand for a healthier lifestyle has been promoting the growth of the nutraceuticals market. Annatto (Bixa orellana L) is an Amazonian plant that produces a red pigment in its seeds, widely used in the industry as a dye. This plant has also been recognized for its potential to produce bioactive molecules with antioxidant activity, which can be used to protect against cancer, cardiovascular problems and aging. One way to consume these natural products with bioactivity is through encapsulated products, which aim to increase the shelf life of the product. However, the composition of encapsulated products can affect the content of bioactive compounds present, having implications for the desired effects of their consumption. Thus, the objective of this work was to characterize in natura annatto seeds and encapsulated annatto products, sold as nutraceuticals, in terms of physicochemical properties, bixin content, antioxidant potential, and antimicrobial activity, in order to verify differences in the properties of interest between the different products, one sample in natura (A1) and three encapsulated (A2, A3, and A4). The samples have moisture contents ranging from 7.82 to 11.96%, values that make the microbial deterioration of the product difficult. Ash analysis indicated the presence of impurities in the encapsulated sample A2. In the analysis of lipids, all samples presented low values ranging from 0.55 ± 0.03 to 1.31 ± 0.03%, and for the protein content, the samples presented values lower than those found in the literature between 1.94 ± 0.01 and 2.47 ± 0.14%, possibly due to the methodology used. The content of bixin, the most abundant bioactive compound in annatto, was higher in the in natura sample (A1) with a value of 1.14 ± 0.03%. The in natura sample also presented superior results for almost all antioxidant analyses, except for flavonoids, in which the A4 encapsulated obtained the highest concentration, being the encapsulated sample that best stood out in the antioxidant activities. In the analysis of the antimicrobial potential, only the annatto in natura sample showed the ability to inhibit the growth of the S. aureus bacteria, with a CMI value of 417.0 μg.mL-1, not being able to inhibit the growth of the bacterium E coli. With the results obtained in the present work, the encapsulated that stood out was the A4, being, therefore, the most suitable for consumption, if it is not possible to consume the sample in natura. In addition, from the results obtained, it is evident that the composition of the product must be considered for consumer choice in order to guarantee the expected benefits of its consumption.
