Resumo: The following project analyzes the implementation of a whole wheat and white flour industry entitled “Moinho Trigossul”. First, a market analysis was done, which evaluated the current scenario of the milling sector, studied the wheat flour consumption over time and internal flour demand in Brazil. Mandaguari city, proved great potential for the mill implementation, because it has a large wheat production on its surroundings and, also, has a road network that will allow the flow of produced flour. The white and whole flour process it is composed by a sequence of unit operations: cleaning, grain humidification, milling and separation. All the equipments that make up these necessary steps were specified with their dimensions and capacities. Based in this process, the mass balance study was done to elucidate amount and composition of final product and residue. In addition to the mass balance, the energy balance study was done to estimates the equipments energy expenditure and, especially, for the dryer operating conditions was evaluated. The products sold by the Moinho Trigossul will be packages of 1kg and 5kg for its white flour and 1kg package for its whole flour. Finally, a financial analysis was done, which consolidated the company’s financial viability, net profit, the time of 11 years to pay all debts from its financing and the enterprise’s IRR and MIRR that expressed 15% and 13% respectively.
