Resumo: Given the high number of public schools in Francisco Beltrao and children who consume pasteurized milk used in the municipal school feeding, we decided to evaluate the physical-chemical and microbiological quality of the product provided by family farmers in the municipality. This research aimed to analyze the parameters for the pasteurized milk, according to the limits recommended by law. For this, there were the physical and chemical analysis: acidity, density, fat content, protein content, fat dry extract, the presence of alkaline phosphatase and peroxidase, and microbiological analyzes of total bacterial count, count of aerobic bacteria psychrotrophic, proteolytic microorganisms count and coliforms at 35 °C and 45 °C. It was concluded that the physicochemical results, such as proteins, density, ESD, acidity, and the peroxidase enzyme, are not all under the law, with values both above and below the required limits. In the case of peroxidase, negative results were found, showing that in some collections, pasteurization temperature has been exceeded. Some samples showed values above the standard for total bacterial count and coliforms at 35 °C, which can indicate flaws in hygiene during the whole process, from milking to processing of pasteurized milk itself. For the analysis of proteolytic, psychrotrophic and coliforms at 45 °C in all the collected samples showed satisfactory results. The results were passed on to the School Food sector of the Municipal Department of Education, which will evaluate the need for actions aimed at quality control of infant feeding milk supplied by farmers.
