This work aimed to evaluate the physico-chemical characteristics (acidity, reducing sugars, ash, pH, sucrose, insoluble solids and humidity) and adulterants test (Fiehe, lugol and Lund) of honey bees Jataí (Tetragonisca angustula) according to Instruction Rules 11, October 20th, 2000.The samples were collected on the Riveda Farm, located in Felisberto district of the city of Curiúva-PR. The samples were obtained from four honey boxes and the analysis performed in sextuplicate. The data were processed by the statistical program BioEstat 5.0, the model used was descriptive statistics to survey the central measure such as mean and maximum and minimum values observed. The results obtained in this study confirm that the current legislation does not include the physical and chemical characteristics of Jataí bee honey (Tetragonisca angustula), therefore, this work adds to the related studies to further obtain a pattern with governmental agencies seeking specific legislation, with more information to the consumption of this product. O mel da abelha Jataí é um produto que tem apresentado uma demanda crescente de mercado, mas que em relação ao seu consumo e para fins medicinais ainda possui poucas informações. Este trabalho tem por objetivo avaliar as características físico-químicas (acidez, açúcares redutores, cinzas, pH, sacarose, sólidos insolúveis e umidade) e teste de adulterantes (Fiehe, lugol e Lund) do mel da abelha Jataí (Tetragonisca angustula) conforme Instrução Normativa 11, de 20 de outubro de 2000. As coletas foram realizadas na propriedade rural Riveda, localizada no distrito de Felisberto da cidade de Curiúva-PR. As amostras foram obtidas de quatro caixas de mel e as analises realizadas em sextuplicata. Os dados foram tratados pelo programa estatístico BIOESTAT 5.0, a modelagem utilizada foi à estatística descritiva para levantamento da medida central média e valores máximos e mínimos observados. Os resultados obtidos nesta pesquisa confirmam que a legislação atual não engloba as características físico-químicas do mel de abelha Jataí (Tetragonisca angustula), sendo assim, este trabalho soma-se a estudos correlatos para num futuro próximo obter-se um padrão junto a órgãos oficiais, buscando uma legislação específica, com mais informações para o consumo deste produto. 2020-11-16T12:05:49Z 2020-11-16T12:05:49Z 2015-06-24 bachelorThesis LOPES, Any Ellen Prestes.
