This study aimed to analyze the operational dynamics of a midsize university restaurant using discrete simulation techniques. The discrete event simulation systems is a popular tool for enabling the operator to the evaluation of complex systems, considering their dynamic behavior, and suggesting improvements, without changes to the real system. The objective of this study was: to understand the operational dynamics of the university restaurant in question, build a flow chart identifying each step of it, to further develop their computer model, validate it, analyze the results, and propose improvements to the identified bottlenecks. The model was developed and run in Arena® software. In order to build the operational model, the analysis of the study site was made, collected the actual times in order to achieve more accurate results as well as the average number of persons who answered the restaurant and supported. With the analysis of data acquired in the simulation, and demand forecasting, a suggestion for improvement to better customer service has been made. |
